Baking with Holly: Vegan Choc Chip Cookies!



Being Vegan  doesn't mean you have to  go without life's pleasures!
In one of my favourite cookbooks, BabyCakes Cover the Classics, they have this quick and easy gluten free and vegan choc chip cookie recipe that not only tastes good but it's good for you.

What you are going to need is:

150g Porridge Oats
130g All Purpose Flour or Plain Flour
160g Vegan Sugar
30g Ground Flax Meal
30g Arrowroot
1 1/2 Teaspoons Xantham Gum
1 Teaspoon Bicarbonate of Soda
1/4 Teaspoon Salt
200ml Melted Coconut Oil
6 Tablespoons Unsweetened Applesauce 
1 Teaspoon Vanilla Extract
150g Vegan Chocolate Chips

This is super easy all you do is get your scales and weigh each thing into the bowl no need for measuring!
Start by preheating the oven to 170C or 325F.
Line a cookie sheet with baking paper.

In bowl whisk together all the dry ingredients except the chocolate.
Then add all the wet ingredients.
Then stir them all together with a rubber spatula until the mixture becomes a thick dough.
Then add your chocolate chips and stir them through!

Roll teaspoon sized balls of mixture in your hand and place on the lined cookie sheet leaving 4cm gap for spreading!
Place in the oven for 7 minutes then rotate your cookie sheet and bake for another 7 minutes or until golden brown and firm!
Let the cookies stand on the cookie sheet for 15 minutes before eating.

And you're all done!
